Windwalker is generally better. Tank specs aren't great in PvP.

Bm monk isn't that great as it used to be in 7.0.3 pvp but still, its sturdy but not like prot pala/prot warrior. My opinion is that i cannot really recommend it but here is the guide about brewmaster monks in pvp i found, hope it helps https://youtube.com/watch?v=bSLjBruWgkU:

Honestly, it depends on your prefference. While Eye of the Tiger is a good DoT, that can also help remove stealth from targets (since it's not dispellable), Chi Wave does a similar amount of damage and healing, but it also helps to keep your mastery up. (the Combo Strikes + Hit Combo talent - if you took it, which you should)
