Ingrediente
1 bucata sunca (1 kg)
1 foaie dafin
1 lingurita boabe piper
Mod de preparare
Cu o zi inainte sunca se pune in apa la desarat. Se lasa pana a doua zi, timp in care se schimba apa de cateva ori. Se spala bine sunca sub jet de apa.
Se pune sunca la fiert in apa care sa o acopere de tot. Se adauga dafinul si piperul.
Se fierbe la foc molcom pana furculita intra usor in ea (in cazul meu 2.5 ore). Timpul de fierbere depinde de dimensiunea bucatii de carne si de cat de tanar a fost porcul. Daca sunca are os, atunci puteti verifica astfel: daca osul iese usor din carne, sunca e fiarta.
Se lasa sunca sa se racoreasca in apa in care a fiert.
Se scoate din apa, se curata de grasime (daca doriti, nu e obligatoriu), se inveleste in folie si se aseaza intr-un vas incapator. Fiindca la fiert fibrele carnii se separa, se pun greutati deasupra ei ca sa o preseze. Se lasa la frigider pana doriti sa o consumati (eu am lasat-o peste noapte).
Sunca se serveste cu hrean, telemea, ceapa verde si ridichi, alaturi bineinteles de ouale rosii de Pasti.
