Do not burst him down. Attack with a very low damage spell or taunt him into coming to you, down, after which kill him and loot him. If you burst him from the start he dies and drops into texture (in which case a relog might help). We do not recover that mount in this situation.

And try to kill him on flat ground in order to be lootable. Otherwise, textures win and you lose the loot.
