Ingrediente

4 ossobuco de vitel (cca 750 gr)
2 linguri ulei
1 lingura unt
2 linguri faina
1 ceapa
1 morcov
1 tulpina telina
2 rosii din conserva
1 foaie dafin
3 prize cimbru
4 boabe de ienibahar
120 ml vin alb sec
1 cana supa de pui sau vita (sau apa in lipsa supei)
sare, piper

Gremolata

1/4 legatura patrunjel
coaja rasa de la 1/2 lamaie (sau sucul de la 1/2 lamaie daca nu aveti lamai bio)
1 catel mare usturoi
2 fileuri ansoa (optional)

Mod de preparare

Presaram ossobuco cu sare si piper, apoi le trecem prin faina. Scuturam excesul de pe ele. Prajim ossobuco in uleiul incins, pe ambele parti, pana sunt usor rumene. Le scoatem din tigaie.
Adaugam untul in tigaie si apoi legumele (ceapa, telina, morcovul) taiate cubulete mici. Le calim un pic pana se inmoaie.
Adaugam vinul si fierbem cca 2 minute sa se evapore alcoolul.
Adaugam carnea inapoi in tigaie, adaugam dafinul, cimbrul, ienibaharul, rosiile rupte cu furculita si supa (eu am pus supa de pui). Aducem totul la fierbere si apoi dam focul la mic. Adaugam cam 1 lingurita sare (depinde cat e de sarata supa pe care o folositi) si 2-3 prize piper. Fierbem cu capac pentru 1 1/2 ore. Tot la 30 minute intoarcem ossobuco.
Amestecam toate ingredientele tocate pentru gremolata. O adaugam in mancare cu doar 5 minute inainte de a stinge focul.
Servim cu mamaliguta, piure de cartofi sau risotto milanese (risotto cu sofran).
