The Garrison Cache next to your Town Hall accumulates Garrison Resources (GR) automatically at a rate of 1 GR every 10 minutes of real time (6 per hour), which works out to 144 GR every full day (6 x 24hrs = 144 GR). There is a cap of 500 GR, so you can be gone for about 3 days, 10 hours before it stops collecting GR at 500 (1,000 with 6.2 upgrade*). This is similar to Work Orders that, when fully filled out, allow you to leave them unattended for a few days. A nice thought by Blizzard for people who cannot log in daily. Update for 6.2: Now players can increase their Garrison's Cache cap from to 1,000 GR's by buying a Trade Agreement: Arakkoa Outcasts from Vindicator Krethos (A) / Shadow Hunter Denjai (H) - they are inside the faction's main bunker in the newly-opened Tanaan Jungle (Lion's Watch for Alliance, Vol'mar Hold for Horde). Note that purchasing Trade Agreement: Arakkoa Outcasts requires being Revered with Hand of the Prophet (A) / Vol'jin's Headhunters (H) faction (same faction needed to upgrade one's shipyard) and 2,500 gold.
