I lost consideral minutes to discover that Black Temple and Caverns of Time, BT is not allowed to even open and C T I enter it but all mobs didn't exist, was empty the place...
I want to know what are the instances that is working...?

I'm at Evolution Realm...

At least on Exodus,they are not working.Should be the same on all realms.

Black Temple was closed because "it caused lags"(at least that's official version). Unfortunately it won't get fixed/opened soon :/

By Caverns of Time I guess you mean Hyjal Summit instance. It works, there are mobs, but you have to do it blizzlike way.
You have to start in Alliance base and beat Rage Winterchill, then Anetheron. After that you can move to the Horde base and encounter Kaz'rogal then Azgalor. Then you can go to Night Elves base and fight Archimonde.

Most of Caverns of Time works. I some achievements out of there as well as quests.

P.S. Be sure to relog before trying to enter a dungeon/instance.
