Well you have 1 hit whenever something hits you and whenever you activate Barkskin you also deal damage around you. So it would be 2 hits/sec on each target.
This however gets ridiculous when you PvP against a Guardian druid as a Guardian druid. Your combat log gets flooded with Brambles as both of you deal 4 instances of damages in less than a second.
